A few years ago Apple changed the keyboard behavior to use the keyUp key rather than the key that you hit first.
You you can change that back in
Accessibility -> touch accommodations -> use initial touch location.
This uses the key you pressed initially instead of the key your finger was above when your finger came up off the screen.
This change has always driven me bonkers, so I'm glad there's a way to change this behavior.
And it's great because touch accommodations doesn't need to be on!
